Do you sell complete packages or add extras for a fee?

Recently I went to a hotel for a meal. The menu looked great.


I liked the look of the steak. It was £23 which isn't cheap … but I do love a good steak.


Then I noticed that main courses didn't included potatoes or veg. These were regarded as extras. At £4.50 for each "side order" the price had gone up to £32.


Then came the clincher. A discretionary 10% was added for service. About 2 minutes away was a small restaurant that included potatoes and chips with every main courses and didn't add a service charge.


So what choice would you make? Stay in the hotel or walk two minutes up the road to their competitor? More importantly do you sell complete packages or add extras? Does this boost your profits .. or drive customers away? Think about it.
